table par rapport &agrave; 2025,<\/span><\/a><span style=\"font-weight: 400;\"> tandis que les d&eacute;penses restent stables dans la premi&egrave;re et progressent de 0,9 % dans la seconde. Dans le m&ecirc;me temps, l&rsquo;indice Foodcost affiche une hausse de 10 % sur un an en mai 2026.<\/span><\/p><p class=\"small-txt font-regular\"><b>Un restaurant peut donc pr&eacute;server son chiffre d&rsquo;affaires en servant moins de clients, port&eacute; par un panier moyen plus &eacute;lev&eacute;, tout en absorbant une hausse de ses co&ucirc;ts.<\/b><span style=\"font-weight: 400;\"> Les ventes tiennent, mais la marge peut d&eacute;j&agrave; se resserrer.
